A true British classic popular old-fashioned School Cake



200 g Self raising flour
200 g unsalted Butter
200 g Caster Sugar
4 eggs
Splash milk
Icing sugar

Cooking Instructions

Step 1
Mix butter and Sugar together until light and fluffy
Step 2
Add in Flour and eggs until you have a nice smooth batter. You can also add some vanilla essence at this point if you wish

Step 3
Pour your batter into a buttered cake tin. Cook time will depend on the depth of your cake tin. Mine took about half an hour at 160 in fan oven. You’re looking for a light golden colour and you can test your cake is done by sticking in a skewer, if it comes out clean you’re done.

Step 4
Leave your cake to cool a little before removing from the tin and placing onto a cooling rack
Step 5
Mix together icing sugar and some warm water until you get a consistency you are happy with. Spread the icing onto you cake using a knife dipped in some water, add sprinkles and enjoy!
