Pastry Cream Filled Donuts

Ingredients:

– 2 1/2 cups all-purpose flour
– 2 tablespoons granulated sugar
– 2 teaspoons baking powder
– 1 teaspoon salt
– 1/4 teaspoon ground nutmeg
– 1/2 cup (1 stick) unsalted butter, melted and cooled
– 3/4 cup whole milk
– 2 large eggs
– 1 teaspoon pure vanilla extract
– 1/2 cup vegetable oil
– 1 recipe Pastry Cream (see below)

Instructions:

1. In a large bowl, whisk together the flour, sugar, baking powder, salt, and nutmeg.

2. In a medium bowl, whisk together the melted butter, milk, eggs, and vanilla extract.

3. Pour the wet ingredients into the dry ingredients and stir until just combined.

4. Heat the oil in a large, deep skillet over medium heat until it reaches 350°F (177°C).

5. Drop the dough by tablespoonfuls into the hot oil and fry for 2 to 3 minutes, or until golden brown.

6. Flip the donuts over and fry for an additional 2 to 3 minutes.
