Lasagna Roll Ups

9 lasagna noodles cooked and cooled
1 jar spaghetti sauce

FILLING: 1(24 oz) container cottage cheese
1 egg
1/4 cup Parmesan cheese
1 Tbsp. parsley flakes
1/8 tsp. black pepper
1 tsp garlic salt
1/2 cup frozen spinach (optional)
3 cups shredded mozzarella cheese

Pour half of the spaghetti sauce in a 9×13 baking dish. Mix together all ingredients of the filling except one cup of the cheese. Take one noodle at a time and spread the entire length with the filling. Roll up and place in pan. Continue until all noodle are rolled. Top with remaining sauce and cheese. Cover with plastic and then tinfoil before freezing. 

To Cook: Bake at 350 for 1 hour or until heated through.

Christmas Sugar Cookies

INGREDIENTS :

  • 1 cup granulated sugar
  • 1 cup powdered sugar
  • 2 cups shortening
  • 3/4 teaspoon vanilla
  • 1 large egg, beaten
  • 4 1/3 cups cake flour
  • 3/4 teaspoon baking soda
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon salt

Plain or colored sugar, for decorating

Preheat your oven to 375 degrees.

In a mixer, cream together sugars and shortening. Mix on slow speed 30 seconds,
then scrape down the bowl with a spatula. Increase speed to medium and mix for
3 minutes.
Slowly add vanilla and beaten egg while mixing.
In a separate bowl, combine cake flour, baking soda, baking powder and salt.
Gradually add the flour mixture to the creamed mixture, mixing on slow speed
until just blended. Do not over mix.Scoop with an ice cream scoop and roll in
sugar. Place on baking sheet on foil. Flatten slightly with palm of hand, or
the bottom of a glass cup, which is what I use.

Bake 9 to 10 minutes. Cookies will be done when they have a light golden color
and have small cracks. Be sure to watch the first batch in the oven to know the
correct time.

Corn Cake Recipe

Ingredients:

1 cup all-purpose flour
1 cup yellow cornmeal
1/2 cup white sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1/3 cup vegetable oil
1 cup buttermilk
2 eggs
3/4 cup corn kernels

Instructions:

1. Preheat oven to 350 degrees F (175 degrees C). Grease an 8 inch square baking dish.

2. In a large bowl, stir together the flour, cornmeal, sugar, baking powder, baking soda and salt.

3. In a separate bowl, mix together the oil, buttermilk and eggs.

4. Pour the wet ingredients into the dry ingredients and mix together until just combined.

5. Fold in the corn kernels.

6. Pour the batter into the prepared baking dish.

7. Bake for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean.

8. Allow to cool before serving. Enjoy!
